#HappyHourClub Day 01: Put A Freixenet Cava Blueberry Ring (Pop) On It
Beyoncé said it best, PUT A RING ON IT, so in honor of Bey, I'm kicking off the first day of #happyhourclub with her and Blue Ivy in mind. It just so happens that September is National Blueberry Popsicle month and that got me thinking of yogurt ring pops. Luckily Tovolo makes great Popsicle molds that helped manifest this crazy idea into reality. So I got out my goat milk yogurt from Trader Joe's, whipped up some blueberry syrup and created a kid-friendly Ring Popsicle—perfect for super moms everywhere as this Popsicle is sans alcohol. In order to get fancy and channel our inner Sasha Fierce, it's only natural to add champagne. While my budget doesn't allow Dom or Cristal at the moment, I went with Freixenet Cava. Next, pop that bottle, take your giant size ring pop and dip it into your champagne coupe (use a wide rim glass so you can dunk without any awkwardness). Now you and your mini me can cool off in style.

Here’s what you’ll need:
- 1 or 2 bottles of Champagne or Cava depending upon how many guests you’ll have
- Wide rim glasses called champagne coupes for dipping
- Goat Milk Yogurt (I prefer Trader Joe’s brand)
- Blueberries
- White Sugar or Agave syrup (great substitute)
- Water
- 1 Organic Lemon
I love this Blueberry Syrup recipe from Simple Bites: How to Make Your Own Blueberry Syrup. Just be mindful of the time and heat it takes the make the syrup. I’ve tried this recipe with agave syrup and white sugar so feel free to substitute. It tends to be slightly sweeter with the agave.
For the Popsicles:
Spoon the goat milk (or coconut milk) yogurt into the tovolo popsicle molds and drizzle in your cold blueberry syrup. I like to layer mine so you get some great marbling effects. Let the Popsicles freeze for at least 24 hours. To loosen the molds run warm water over them. This will help make it easy to slide the ring pops out and hopefully limit the breakage on your creations. For presentation: I like to sit the Popsicles on a bowl of ice to help keep them cool. Up your game by using a beautiful vintage bowl.
Next, pop your bottle of champagne and pour into a wide rim glass. Trust me, you don’t want any skinny mini glasses here. Now you’re set to dip and get fancy.
