#HappyHourClub: Slow Cooker Angel Food Cake with Cherry Sauce + Cherry Mimosas

The back story: Tatiana and I met thanks to many #happyhourclubs prior. Tatiana works with 3 Black Dot down the hall from B&G Studio. Always friendly and entertains me when I start my chatter, it was only natural that we would find a way to collaborate. One night after everyone had left the Unique Space compound, Tatiana, KC and I were last people standing—packing up in a rush for the weekend. That’s when KC spotted Tatiana’s mini slow cooker and the brainstorming began. From there it was all about cake talk and figuring out what cocktail would WOW mom and guests. Luckily Tatiana took the cake reigns and ran with it. While the cake cooked, the kitchen was filled with questions and curiosity. It seems that most did not know you could cook up desserts in the crock pot. Well, my friends, this is one recipe that I’m very excited to share and can’t wait until Tatiana and I whip up another pairing. B&G: What’s the story behind this crafty cake? I am a foodie and a self proclaimed slow cooker evangelist. I seriously love the thing! Over the years, slow cookers have gotten a wrap for only being able to slow cook tough meat or making a batch of chili. I love blowing people’s mind by sharing you can make a cake or bread in a slow cooker. The slow cooker gives the cake a super moist, soft texture; yet has a surprisingly toasty, crunch on the edge like a traditional oven. That is the best of both worlds if you ask me!

B&G: Who would be your idea muse for this delicious creation?

My mom was my muse for this cake. Growing up she always had a hot meal on the table for the family, despite working full time and volunteering for countless activities. The slow cooker lets me have a tasty, no fuss home-cooked meal or dessert with ease. Set it and forget it!

B&G: What’s the perfect pairing for this dessert?

The perfect pairing for this angel food cake with cherry sauce is a sweet tooth and a hungry appetite. After smelling the cake bake slowing for 4 hours, trust me your house will be engulfed in a wonderful smell. Its kind of hard to share at that point!

B&G: Your ideal Happy Hour moment:

My ideal Happy Hour is at the hands of a Mixologist. I’m pretty sharp in the kitchen and can whip up some great dishes but its nothing like having a well crafted drink with exotic flavors.

Tatiana EL-Khouri's Slow Cooker Angel Food Cake + Cherry Sauce / Cherry Mimosas

Cake made in a slow cooker? Yes please! Perfect dessert for Mother's Day and easy to make. Mom would be so pleased.

Cake

  1. 1 box Angel Food Cake Mix
  2. 1 small box instant lemon pudding
  3. 1 cup sour cream
  4. 4 eggs
  5. 1 cup water
  6. 3/4 melted butter

Cherry Sauce

  1. 2 16 ounce packages frozen unsweetened pitted dark sweet cherries
  2. (or 2 cans unsweetened pitted dark sweet cherries drained & rinsed in water)
  3. 1/4 cup apple cider or apple juice
  4. 1/4 cup Rum or your favorite alcohol
  5. 1/4 cup packed brown sugar
  6. 3 tablespoons amaretto
  7. 2 tablespoons quick-cooking tapioca

Mimosas

  1. 1 Part Champagne (Cava works well too)
  2. 1 Shot of Cherry Sauce made from slow cooker
  3. 1 Shot of Pure 100% Cherry Juice (Trader Joe's has a great cherry juice)

Cake

  1. Mix all the ingredients in a bowl. Mix until smooth. Grease the inside of the slow cooker and line the inside with parchment paper, this will help with the removal of the cake. Pour mixture inside lined slow cooker.
  2. Cook on low for 3.5 to 4 hours.

Cherry Sauce

  1. Mix all the ingredients in a bowl. Place in a greased slow cooker.
  2. Slow Cook: 4 hrs to 5 hrs (low) or 2 to 2 1/2 hours (high)

Cherry Mimosas

  1. Pour champagne or cava into a champagne flute
  2. Add 1 shot of cherry juice
  3. Add 1 shot of cherry sauce made from slow cooker recipe
  4. Top off with actual cherries from sauce for garnish

Notes

  1. For the cherry mimosas featured here, I used an edible gold glitter purchased from etsy. It's messy but is the perfect decoration for Mother's Day.
