Pie Time: Tyler Wells' Grandmama's Cobbler (Pie Style)

Grandmama's Cobbler Pie / Bourbon and GooseRemember when I talked about the Oscar Pun Potluck and my Dallas Pie Club? Well, as promised here is the second pie that belonged to the club: Tyler Wells (of Handsome Coffee) Grandmama's Cobbler. Now I know what you are thinking: this ain't no pie. But I HAD to make it a pie in order for it to fit the theme, right? I received this recipe during an event at Apolis in Downtown LA where Tyler Wells shared his epic journey. Tyler is a great storyteller; he was entertaining, honest and above all he brought homemade treats—one of which was his Grandmama's Cobbler. Truth be told I've been holding on to this recipe since December so it was finally time to put it to good use. Kind of radical to do for a party, especially since I had never made a cobbler into a pie before but damn it, I'm a risk taker.  While Sam cheered me on and gave me a couple of questionable looks, I was able to power through. Oh course, I had my hiccups like realizing I forgot to get a pie crust for this bad boy. Thankfully Sam came to rescue so another trip to the grocery store in the rain was averted. Next challenge: the recipe omitted the amount of sugar needed. Now what is a girl to do? You google that shit. I found a similar dish which supplied the info needed and also helped me avoid a meltdown. Let's just say both these hurdles required some much needed venting and dancing which meant blasting some tunes. Once everything was mixed together and the blackberries were placed (at this point it was more like they were tossed), it was time to pop this pie into the oven. Here is where I get honest. This damn pie took a hell of a lot longer than the recommended time. I think I must have kept it in there for an additional 20 minutes and then again for another 10 minutes at 250 degrees. So when you try this pie, be sure to check it multiple times so you don't have a situation on your hands.

Tyler Wells Grandmama's Cobbler Recipe (Pie Style):

Ingredients:

  • 1 cup all purpose flour
  • 3/4 cup milk
  • Pinch of salt
  • 1 pint of blackberries
  • 1/2 teaspoon almond extract
  • 1/4 cup melted butter
  • 1 frozen pie crust

Prep: First things first, pre-heat oven to 400 degrees. While the oven is getting warm, combine berries and almond extract. In another bowl, mix sugar, flour, milk and salt until lumpy. Pour this mixture into your frozen pie crust. Next, place the berries in the mixture and pour your melted butter on top. Bake for 25 minutes or as mentioned above, until the middle of the pie is set. I use the tried and true trick of a toothpick, making sure the pie is nicely cooked. Let the pie sit for 10-15 minutes before serving. If you prefer to keep to the cobbler style, omit the pie crust and use a buttered 9 inch cast iron skillet. Enjoy! Before You Bake Grandmama's Cobbler Pie / Bourbon and Goose
